Feel-Good-Cookies

Sorry for taking so long to upload but things have been really rough. My grandma has been really sick and one friend of mine really needs your prayers, so please forgive me for this weekly posting thing.
But I do have recipes and good food to share with you.
I have my niece next to me so I'm very distracted...she is the most adorable thing ever made hehe. She's a big blessing in my life and I love her so much. Don't believe me, here's a picture.

Okay, so with all these problems going around I always turned to my best friend, comfort food. Nothing says comfort food like cookies....but I hate cutting my intake of cookies when I'm feeling bad because I'm worried about all the fat, that's why these cookies have no oil!!! ...and almost no flour, I love them so much! My family loved them too.

Here it goes.

1/4 cup of brown sugar
1/2 cup of sugar
1/3 cup apple sauce
1/4 cup soymilk
1 teaspoon vanilla extract
3/4 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup of chopped walnuts


In a large bowl, mix sugars, apple sauce, soymilk and vanilla.

In another bowl, mix the flour, baking soda, cinnamon, baking powder and salt, then stir into the wet mixture.

Add the oats and then the walnuts.

Drop rounded teaspoonfuls onto a greased cookie sheet and bake for 8-10 minutes in a 375F (162ºC)

Don't let them more minutes in the oven because that will make them tough, and the magic of these cookies is how chewy they are.


Now that they have come out of the oven you can cozy up with the family and watch some old Bruce Willis' movie....at least that's what I did. (Don't judge me hehe).
